Spaghetti Squash with Meatballs and Tomato Sauce

Spaghetti Squash is one of our favorites because of how easy it is to prepare, and it goes well along with anything. You can even prepare it and substitute the “noodles” for any in your favorite recipes. If you’ve never tried it, then what better way to start out then the classic – meatballs and tomato sauce! The meatball and sauce recipes for this came from a recipe on Julie Shannon’s blog.

Ingredients (meatballs)

  • 2 lbs grass-fed ground beef

  • 3/4 cup almond meal/almond flour

  • 3 tablespoons Chopped onion (preferably fresh, but dry will work)

  • 1 tablespoon Garlic Powder

  • 1 tablespoon Basil

  • 1 tablespoon Cumin

  • 1 teaspoon Sea Salt

  • 1 teaspoon Black Pepper

Instructions (meatballs)

  1. Put all of the above ingredients into a mixing bowl.

  2. Mix together with your hands until everything is combined.

  3. Roll mixture into small balls and place onto aluminum foil or parchment paper lined baking sheet.

  4. Bake at 400 degrees for 20 minutes or until meatballs are cooked through.

Ingredients (Sauce)

  • 1 small onion – chopped

  • 4 small tomatoes – chopped

  • 1/2 cup chopped cilantro

  • 2 tbsp Adobo sauce

  • 1 cube Beef bouillon

  • 1 tsp curry powder

  • Salt to taste

  • Chilli powder (optional)

  • 1/2 cup olive oil

  • 1 tbsp minced garlic

Instructions (sauce)

  1. Combine chopped onion and garlic in olive oil over medium high heat until browned

  2. Mix all seasonings in bowl with 1 cup water.

  3. Add tomato, cilantro and seasoning to pot.

  4. Stir and let simmer on low for 10 minutes.

  5. Taste and add salt if needed.

  6. Cook to desired texture. Add more water if desired.

Spaghetti Squash Instructions

  1. Use a sharp knife to cut it in half, avoiding the stem.

  2. Scrape out the seeds

  3. Brush on your favorite melted fat (I used olive oil, but you can use grass-fed butter, ghee, or melted coconut oil)

  4. Sprinkle on salt and pepper

  5. Place the squash cut-side down in a microwave-safe glass container…

  6. Cover with a lid, making sure to leave a small vent, microwave for 5 minutes. Rotate the halves, and cook for another 3 minutes or so. Cook for an additional 1 minute at a time, checking it each time.

  7. When it is soft to the touch you can stop cooking, and let it rest for 10 minutes.

  8. Using a fork, scrape out the middle into “noodles”.

Tip: Spaghetti Squash can also be prepared by baking it in the oven at 350 degrees for about 30 minutes. Just prep it with oil, salt and pepper as described above, and place the halves cut side down on a baking sheet.
